Elsa has a well balanced sweet and sour taste, aromatic and a full rich velvety brown color. Elsa vinegar is obtained through the slow fermentation of grape must of the Lambrusco Salamino D.O.C. 6% acidity.

Summary: Spoiled rotten
Comment: I visited a boutique food cafe where I had the opportunity to do a complete balsamic vinegar tasting of high end vinegars. This was the best and until you do a tasting, you can not believe the difference in taste. Since I fell in love with it, the shop discontinued the Elsa so I have purchased it a couple of times online. It's well worth it!!

Comment: This is the Third time we have ordered this vinegar on-line. It is sweet and very pungent. My wife uses it to make salad dressing and dipping sauce with olive oil and garlic for dipping sour dough bread in.
