Summary: Pretty good corn bread and it does not get easier than this
Comment: I tend to stay away from mixes in general so I can't say this has the quality of the real thing, but given my low expectations for corn bread made in a microwave oven, the Food-tek corn bread definitely surprised me and tasted pretty yummy. My daughter -who can actually have as much gluten as she wants- raves about it and loves that she can just pop a serving in the microwave and take it to school for lunch without any further preparation.

Comment: I bought several of the food tek items a few months ago, but frankly bought them for emergency situations. I had not tried any of them until tonight when we wanted corn bread with our soup. My last gluten free corn bread attempt had been a disaster, so I thought what the heck let's try the food tek cornbread it can't be much worse.
It truly was easy to mix, and it cooked up in 1 minute. I toasted the cornbread for just a couple of minutes to give it a more normal oven baked cornbread look.
It was sweeter than I would like, but definitely better than I had made from scratch. My husband does not have to eat gluten free and he said "get some more of these", so I just placed my order for this and several other of the food tek items.
If you don't like sweet cornbread, you won't like this. It is very sweet.
