Customer Rating:      Summary: Santoku Knife Comment: This knife, alongside the Wusthof Chef's knife, has been among the staples in my kitchen for many years. I would not recommend sharpening this knife with the Wusthof sharpener, however. Treat the knife well well -- use a smooth ceramic polishing rod/steel -- and it should serve the owner well for many years.

Customer Rating:      Summary: Wusthof Classic Santoky Knife Comment: I have purchased three of these knives; one as a gift and two for myself. Without question it is the best knife in my knife block. The shape the balance and the cut will keep it on my gift list for a long while.
Customer Rating:      Summary: Cuttin' up! Comment: I was a little disappointed when my new knife arrived. It's a beautiful tool but the little red Wusthof logo on the handle is just a peal off sticker instead of an embedded logo. Oh well, "purdy is as purdy does" and does it ever do a great job being a "chopper". It is so sharp that it practically fell through a big onion. I then chopped the onion into little bitty pieces real quick just like the big boys on TV showed us how to.
Now, I just luv "taters an' Onions" all pan fried in a big ol' iron skillet, But when it come to pan slicin' them taters, the knife didn't want to turn 'em loose. It don't seem to like slicin' taters. But it sure does a fine job choppin' up everything else in site. I bet they make a great 'tator slicin' knife, and when I save up enough money I'm goin' Amazon shoppin' for one.
I guess them German choppers ain't much on cuttin' up. I thought they had a better sense of humour than that :-)
Customer Rating:      Summary: Amazingly sharp knife Comment: The Wusthof santoku is an amazingly sharp knife. It also has a slight curve that allows a rocking-cutting action. This knife is well balanced and comfortable to use. One of the general claims to fame of the santoku is that foods won't stick to the blade when slicing. I have not found this to be true. Still a dandy knife.
