Kalamata (or Calamata) Olives are almond-shaped Greek olives that have a dark eggplant color and a flavor that is rich and fruity. When they are pitted, the cavity from the pit allows the wine vinegar "marinade" in which they are soaked, to penetrate the meat to enhance the flavor. Our Calamatas are "pitted" for easy eating. Comment: These are great olives. I had been buying Kalamata olives at my local store. These are just as good, if not better and they are a lot cheaper. Good value.
