Cipolline are an Italian pearl onion known for its flat, saucer-like shape. When sautéed, they have a bit creamier consistency than most other varieties of onion.

Although Cipolline are also grown in the U.S., ours are whole Italian onions preserved in a fine Balsamic vinegar. Prepared in this fashion, they are perfect in salads, as appetizers, and most especially as an condiment with roast meats.
